Study 001

Burnt Honey & Sea Salt

We scorched forty batches of wildflower honey before landing on the exact shade — deep amber, one breath away from bitter. Folded into sweet cream at 4°C and finished with hand-flaked sea salt. Our longest-running pint, and the one that built the atelier.

Study 002

Yuzu Creamsicle

A seasonal experiment that refused to leave. Japanese yuzu curd is whisked fresh each morning and ribboned through vanilla-bean cream in thin, bright veins. It took eleven churn trials to keep the citrus from curdling the custard.

Study 003

Espresso Affogato Crunch

A Limited run built for late evenings: cold-brew espresso cream steeped for eighteen hours, layered with chocolate-coated cacao nibs for a bitter-sweet snap. Released in numbered sleeves of five hundred pints — gone in nine days.
